Ingredients:

450 gm boned leg of veal
80 x m, olive oil
1 x onion finely chopped
1 clv garlic finely chopped
1 x green and 1 red pepper de seeded and sliced
150 gm mushrooms sliced
300 ml pint stock
1 x anchovy fillet soaked drained and chopped
5 x olives chopped
4 x tomatoes skinned seeded and chopped
Instructions:
Instructions: Cut the veal into thin strips.

Heat the oil in a pan and fry the meat on all sides for 10 minutes.

Take out of the pan and keep hot.

Add the onion and garlic to the pan and saute for 5 minutes.

Add the green and red peppers the mushrooms and stock and stew for 10 minutes.

Add the anchovy olives and tomatoes.

Return the meat to the pan and season with salt pepper and oregano.

Stew for another 5 minutes then serve.
