2 tbl Olive Oil
1 pkt (6 oz) Uncle Bens White & Wild Rice
3/4 cup Water
1 cube Butter
1 x Onion, chopped
1 x Green Bell Pepper, chopped
2 stalk Celery, chopped
2 x Green Onions, chopped
5 med Zucchinis, chopped
3 med Tomatoes, chopped
12 x Mushrooms, sliced
1 x Clove Garlic, minced
1 sm Pkg Sliced Almonds
The Seasoning Mix from the Rice pkg
Seasoned Salt
Garlic Powder or Salt
Onion Powder or Salt
Sweet Basil
Oregano
Instructions:
Instructions: (A) In 2 Tbsp Olive Oil saute Uncle Bens White & Wild Rice until tender.

Add Water, cover and Simmer for 25 minutes.
* Do Not add Rice Seasoning mix at this time*

(B) In another pan, saute (in 1 cube Butter): Onion, Green Bell Pepper, Celery, Green Onions, Zucchinis, Tomatoes, Mushrooms, Garlic, and Almonds.

(C) Add the remaining according to taste.

(D) Mix into the Rice. Add 1/2 of this mixture into a baking dish, add a few slices of Monterey Jack Cheese. Add remainder of mixture, and completely cover with Monterey Jack Cheese. Bake, uncovered, for 30 minutes in a pre-heated
375 degree oven.
