Ingredients:

4 tbl Olive oil
2 x Garlic cloves, chopped
500 gm Ripe tomatoes, skinned and chopped coarsely, or a 397g (14oz) can of chopped tomatoes (1lb)
1 tbl Finely chopped fresh oregano
1 tsp Sugar
Salt and freshly ground black pepper
Instructions:
Instructions: 1. Heat the oil in a saucepan and gently fry the garlic for 2 minutes.

2. Add the remaining ingredients and cook over a moderately high heat for 25-30 minutes, uncovered, until thickened, stirring frequently.

3. Serve with freshly cooked pasta, garnished with fresh oregano sprigs.

NOTES : This classic Italian tomato sauce compliments pasta perfectly.
