1 x Old Canada goose - (6- to 8-lbs)
Juice of 1 lemon
4 cup Dried pea beans soaked overnight
Instructions:
Instructions: Remove breast meat and cut into finger strips. Simmer strips in water to cover with lemon juice for 30 minutes; drain. Put strips in bean pot with drained pea beans and salt pork. Bake in slowest oven for 8 hours.

This recipe yields 8 servings.
