4 x (or more) Small birds split along backbone
and trussed
2 tbl Flour seasoned with
1/2 tsp Salt and
1/4 tsp Freshly-ground black pepper
1/2 lb Sweet butter melted and hot
1 tbl Minced chives
1/2 tsp Seasoned salt
Instructions:
Instructions: Dust birds with seasoned flour and put in a baking pan. Cover with a double thickness of cheesecloth wrung out in water. Pour on the hot melted butter, and bake at 325 degrees for 20 to 30 minutes. Increase temperature to 425 degrees and bake for an additional 7 minutes. Add chives, seasoned salt, and pepper to the sauce just before serving.

This recipe yields 4 appetizer servings.
