2 x eggs whites room temperature
1/4 tsp cream of tartar
1 cup corn syrup
Instructions:
Instructions: In a mixer, beat room-temperature egg whites with cream of tartar until they hold soft peaks. Meanwhile, bring corn syrup to a full boil in either the microwave or in a small, heavy saucepan. SLOWLY pour the hot syrup into the egg whites, beating on full speed the entire time. (This is easiest if youre using a stand mixer.) Beat at high speed until frosting holds stiff, shiny peaks. Beat in vanilla.

Makes oodles of frosting: enough for middle, top and sides of a layer cake. Cut recipe in half for a smaller cake. This not-too-sweet frosting is a beautiful pure white and is WONDERFUL on chocolate cake.
