1/2 lb monkfish fillets, rinsed well
1/2 cup whole milk
2 cup sharp cheddar cheese, grated
Instructions:
Instructions: Preheat oven to 350F. ( 175C ). Place fish in bottom of a large covered casserole, preferrably with a nonstick finish. ( If not using a nonstick casserole, butter dish lightly before adding fish. ) Pour milk evenly over fish. Top uniformly with cheese & 1/4 cup salsa, cover & bake 15 to 25 minutes or until fish is tender but not overdone. Serve hot, with remaining salsa on the side.

Makes 4 servings.
