Instructions: Preheat oven to 350 degrees. Coat the bottom and sides of a baking dish with the oil. Place the chiles, side by side, in the bottom of the dish.
Sprinkle the cheese over the chiles. Place the eggs in a food processor and beat. Add the milk, flour, salt, pepper, cumin, oregano, and allspice and blend until smooth. Pour the egg mixture over the cheese and chiles and bake in a 350-degree oven for 45 minutes or until the mixture has set and is lightly browned.
