1 tsp olive oil
10 lrg whole New Mexico green chiles,, roast,
peel, & seeded
8 oz low-fat cheddar cheese, shredded
2 x eggs or the equivalent egg substitute
2 cup nonfat or low-fat milk
1/2 cup all-purpose flour
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp ground cumin
1/2 tsp ground oregano
Instructions:
Instructions: Preheat oven to 350 degrees. Coat the bottom and sides of a baking dish with the oil. Place the chiles, side by side, in the bottom of the dish.

Sprinkle the cheese over the chiles. Place the eggs in a food processor and beat. Add the milk, flour, salt, pepper, cumin, oregano, and allspice and blend until smooth. Pour the egg mixture over the cheese and chiles and bake in a 350-degree oven for 45 minutes or until the mixture has set and is lightly browned.

SERVING SUGGESTIONS: This makes an excellent focal point for a vegetarian brunch.
