Ingredients:
Amount Ingredient
4 slc bacon diced
2 x onions diced
1/2 x green pepper diced
1 stalk celery diced
28 oz canned tomatoes undrained (28 to 30)
9 oz frozen okra sliced
4 cup cooked rice or more
Instructions:
Instructions: Brown bacon slightly. Add and cook over Low heat, all diced vegetables.

Add tomatoes and continue to simmer. Wash, stem and cook separately okra.

Drain. Add okra to other ingredients + some of okra cooking liquid. Season with salt and pepper to taste. Serve over cooked rice. Can add shrimp with okra to dish.

NOTES : Mom just called this okra and tomatoes. I usually buy presliced frozen okra.

This could be cut down considerably by only using 1-2 slices of bacon or substituting turkey bacon for pork bacon.Other than the bacon it is relatively fat free. We always ate it over lots of hot cooked rice.
