Instructions: 1. Preheat the oven to 425 F Cook the potatoes in boiling salted water for 5 minutes. Drain well. When cool, peel and slice thinly.
2. Heat 2 tbsp of the oil in a frying pan. Add the sliced potatoes and garlic and fry for 5 - 8 minutes until tender. 3. Brush the pizza base with the remaining oil. Scatter the onion over, then arrange the potatoes on top. 4. Sprinkle over the mozzarella and rosemary. Grind over plenty of black pepper and bake for 15 - 20 minutes until crisp and golden.
