Instructions: Wash the potatoes but leave the skins on. Place the potatoes in a saucepan pour in water to come 30 to 50mm up the side of the pan.
Add a good pinch of salt and two or three sprigs of mint. Cover and stand on the boiling plate and bring to the boil. Boil for 1 minute drain off the water recover and place in the simmering oven. New potatoes are difficult to judge about 30-40 minutes depending upon the variety and size. If they are ready before you are toss in butter and keep warm in the simmering oven.
