Instructions: Either soak the black-eyed peas overnight, or bring them to a boil in the water. If you do the boiling method, do skim off the scum, let it boil for about 5 or so minutes, and then turn off the gas and let them soak for an hour. Pour off whatever water remains, put in the chicken broth or fresh water and cubes, and start them peas cooking. Once the broth is boiling, put in the herbs and spices. Cover, reduce heat, and boil for about an hour and 15 minutes. At that point, stir in the cooked chicken.
I dont know how many this serves - it looks like a good side dish for 4 to 6. I like to serve it over rice, by itself, or on toast. A dollop of sour cream can add nicely to the flavor, but its not necessary. Email this Recipe:
