Instructions: In bowl, mash garlic with salt; mix in oil, lemon juice, paprika, cumin, coriander, ginger and cinnamon.
Cut 1 inch deep slits all over top and sides of pork; rub paste all over roast. Roast on roasting rack in pan in 325 F oven for about 1 hour and 45 minutes or until meat thermometer registers 160 F.
