Instructions: Unwrap pie shell and set aside. Sprinkle gelatin on cold water in a small saucepan, and set aside to soften. Combine milk, sugar substitute, and cream cheese in blender; cover and blend smooth. Add vanilla pudding mix, lemon juice, rind, and salt; cover and blend smooth. Spoon into pie shell and chill until set.
