3/4 cup skim milk
1/3 cup vegetable oil
2 x egg whites or
1/4 cup cholesterol-free egg product
1/2 cup chopped nuts
1/2 cup raisins or snipped pitted dried

1/4 cup all-purpose flour*
4 cup oat bran
3 cup regular or quick-cooking oats
1 cup sugar
3 tbl baking powder
1 tbl salt

Instructions: Prepare Oat Bran Muffin Mix. Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups, 2-1/2 X 1-1/4 inches, or line with paper baking cups. Beat all ingredients except Oat Bran Muffin Mix. Stir in Mix just until moistened (batter will be lumpy). Divide batter evenly among muffin cups. Bake about 15 minutes or until golden brown. Immediately remove from pan. 1 DOZEN MUFFINS; 145 CALORIES PER MUFFIN.

OAT BRAN MUFFIN MIX Mix all ingredients in large bowl. Cover, label and store in airtight container at room temperature no longer than 6 months.

To Microwave: Prepare batter as directed. Spoon batter into 6 paper baking cups in microwavable muffin ring, filling each three-fourths full.

Sprinkle with ground cinnamon. Microwave uncovered on high 2 minutes to 3 minutes 30 seconds, rotating ring 1/4 turn every minute, until wooden pick inserted in center comes out clean (edges of muffins may appear slightly moist). Cool 1 minute; remove from ring. Repeat with remaining batter.
