Ingredients:

10 x plum (Roma) tomatoes
1/2 cup olive oil (use the good stuff)
2 clv garlic, cut in half
1 cup finely sliced basil leaves
red pepper flakes
salt
1 lb noodles, cooked
sour cream or avocado slices optional
Instructions:
Instructions: Peel the tomatoes (drop into boiling water for 30 seconds, then into ice water, then slip off skins). Chop them and combine in a bowl with olive oil, garlic, basil, and red pepper flakes. Let sit for about 2 hours and then remove garlic. Salt to taste. Serve over noodles with whatever optional ingredients (or none) sound good.

I like this best at room temperature, but it can also be served over hot noodles or served cold.
