1/2 oz lowfat chow mein noodles
1/2 cup nonfat buttermilk
1 tsp reduced-sodium soy sauce
1/2 tsp salt-free herb-and-spice blend
1/4 tsp garlic powder
1/4 tsp pepper
6 x skinless boneless chicken breast halves 4 ounces each cut into 18 strips
Instructions:
Instructions: Place chow mein noodles in container of an electric blender or food processor; process until crumbs form. Place in a shallow dish, and set aside.

Combine buttermilk and next 4 ingredients. Dip each chicken strip into buttermilk mixture; coat with crumbs. Place on a baking sheet coated with cooking spray. Bake at 350 degrees for 18 minutes; turn and bake an additional 15 minutes or until golden.
