Instructions: Cook the fresh or dried noodles for 35 minutes in a pot of boiling water. Then immerse them in cold water until you are ready to us them. (They can be left in the cold water for up to 1 hour.)
Now prepare the bean sprouts. I prefer to remove both ends of the bean sprouts as I think this gives them a cleaner look and taste. Shred the ham or bacon into 5cm lengths. Heat a wok or large pot. Add all the sauce ingredients except the sesame oil and bring the liquid to a simmer. Add the cooked noodles and stir fry them to mix them in well with the sauce. Then turn the heat back to high and add the bean sprouts sesame oil and ham or bacon. Continue to stir fry for about 3 minutes until the noodles are thoroughly heated. Turn them onto a warm serving platter and serve at once. Serve the noodles with snacks such as Stuffed Peppers or Steamed Buns. Very suitable for a simple lunch or for a picnic.
