1 x sweet potato, peeled, cut into 1/4-inch cubes
1 tbl vegetable oil
1 x sweet, mild onion (e.g. Vidalia) chopped
1 sm green bell pepper, chopped
1 sm red bell pepper, chopped
1 tbl butter
6 x eggs
Instructions:
Instructions: Bring medium pot of salted water to boil over high heat. Add sweet potato; cook until tender, about 8 minutes. Drain.

Preheat broiler. In large ovenproof skillet, heat oil over medium-high heat. Add onions and peppers. Cook, stirring often, until tender, about 5 minutes. Add butter.

In mixing bowl, whisk together eggs, salt and pepper. Pour into skillet, stirring with fork. Cover; cook about 3 minutes to set eggs.

Uncover. Place skillet in oven. Cook until top of frittata is firm and lightly browned, 1 to 3 minutes. Remove from oven. Using rubber spatula, loosen frittata; slide onto serving plate. Serve hot or at room temperature.

Makes 4 to 6 servings.
