Instructions: Bring medium pot of salted water to boil over high heat. Add sweet potato; cook until tender, about 8 minutes. Drain.
Preheat broiler. In large ovenproof skillet, heat oil over medium-high heat. Add onions and peppers. Cook, stirring often, until tender, about 5 minutes. Add butter. In mixing bowl, whisk together eggs, salt and pepper. Pour into skillet, stirring with fork. Cover; cook about 3 minutes to set eggs. Uncover. Place skillet in oven. Cook until top of frittata is firm and lightly browned, 1 to 3 minutes. Remove from oven. Using rubber spatula, loosen frittata; slide onto serving plate. Serve hot or at room temperature.
