Peel sweet potatoes; cut each potato lengthwise into 8 wedges. In large bowl, whisk together egg, garlic and 1 tb of water. Add sweet potatoes; toss to coat evenly. In shallow dish, combine bread crumbs, cheese, basil and oregano; roll potato wedges in bread crumb mixture and place on greased baking sheet. Bake in 425F 220C oven for 15 minutes. Turn wedges; bake for 12-15 minutes longer or until potatoes are tender. very high source fibre, good source calcium and iron. Email this Recipe:
