Instructions: In a medium bowl, toss together oat bran, flour, baking soda and sugar. Using a wooden spoon, stir in banana and vanilla until well blended. Add yogurt; mix well. Heat a large skillet, preferably cast iron, over moderate heat.
In a separate bowl, beat egg whites with an electric mixer until soft peaks form. Beat 1/3 egg whites into batter to lighten. Fold in remaining egg whites with a rubber spatula. Fold in melted butter. Ladle a few 1/4 cup scoops of batter into heated skillet, spreading batter into 3 1/2-inch to 4-inch circles. Cook until bubbles appear on the surface. Flip and cook until bottoms are well browned, about 1 minute. Serve with maple syrup and blueberries. This recipe serves 4. Email this Recipe:
