Ingredients:
Amount Ingredient
2 cup Oatmeal -- (or rolled oats)
1/2 cup Flour
1 tsp Salt
1 tsp Baking Soda
2 tbl Water
1/4 tsp Maple Extract
1 tsp Baking Powder
1/2 cup Buttermilk -- or sour milk
2 x Eggs -- slightly beaten
1 tbl Sugar
2 tbl Vegetable Oil
----------------- Syrup: ----------------
1 pkt Kool-aid powdered drink mix, unsweetened - (any green flavor)
1 cup Water
2 cup Sugar
Instructions:
Instructions: In a large mixing bowl, combine all dry ingredients. In another medium bowl, combine all wet ingredients. Slowly pour wet ingredients into center of dry ingredients and mix thoroughly (mixture should NOT be lumpy). Pour in amounts desired onto a hot, oiled griddle. Serve with the following syrup, or your favorite syrup.

Leprechaun Syrup:
In a medium size saucepan, first mix sugar and Kool-Aid until distributed evenly. Add water and corn syrup, then heat until boiling. Boil for 1 minute, then remove from heat. Cool until syrup is cool enough to serve over pancakes- the cooler the syrup, the thicker it will be. Store unused syrup in a covered container (no refrigeration necessary).
