Instructions: Preheat oven to 350F.
In a large bowl, whisk together sugars and applesauce until mixed well. Add egg and vanilla and beat well. Add flour, soda, cinnamon and salt, mix well but do not beat. Fold in nuts and chips. Drop by heaping tablespoons onto parchment lined baking sheets. Bake for 10 mins, or until brown. Do not overbake. Cook on racks. Makes 16 cookies NOTES : Today I had such a craving for an Oatmeal cookie I decided to make some. But, when I looked at the recipe on the box of Quaker Oats the first ingredient was 2 sticks of butter! I dont think so! So I decided to try and slim down the recipe and see what happened. I cut the recipe in half so that if it was a disaster I wouldnt have wasted as much food. I eliminated the butter altogether and used applesauce instead. I also added some chopped walnuts and lo-fat baking chips. The results was a very good cookie. Im so proud! Email this Recipe:
