5 x Japanese eggplants
2 tbl vinegar
2 tbl soy sauce
1/2 tbl sugar
2 tsp sesame seed oil
1 tsp Japanese or Chinese chili oil (La Yu)
Instructions:
Instructions: Without cutting off tops, wash and partially peel eggplant and slice into thirds vertically. Soak in cold water 1 hour. In large pot, steam eggplant until soft, about 15 minutes. Drain. Place on a platter. Combine remaining ingredients and pour over eggplant.
