2 lb beef stew meat, cut into 1 inch cubes
1/3 cup flour
2 tbl fat
1/2 x -2 teaspoons salt
1/4 tsp dried leaf thyme
1/8 tsp pepper
2 cup water
2 tbl catsup
6 med potatoes, pared and cut into 1 inch cubes
6 med carrots, pared and cut into 1 inch pieces
Instructions:
Instructions: Roll meat cubes in flour to coat all sides. Use all the flour. Brown meat in fat in heavy skillet or Dutch Oven. Sprinkle salt, thyme, and pepper over the meat. Add water and catsup. Cover skillet with tight-fitting lid and cook slowly over low heat 45 minutes. Stir in vegetables. Cover and continue cooking 30 minutes or until vegetables are just done. yield: 6 servings. 2 quarts.
