1 x beef bottom round roast - (4 lbs)
1/2 tsp salt
1/2 tsp freshly-ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Instructions:
Instructions: Preheat the oven to 400 degrees. Place the roast fat-side up on a roasting rack that has been coated with nonstick cooking spray. Place the rack in a large roasting pan.

In a small bowl, combine the remaining ingredients; mix well. Rub the spice mixture over the entire roast, covering completely. Roast for 30 minutes.

Reduce the oven to 300 degrees and continue roasting the beef until a meat thermometer registers 150 degrees for medium-rare, or until desired doneness beyond that.

This recipe yields about 8 servings.
