Instructions: To make the filling heat the oil in a pan and gently saute the onions and garlic for 5 minutes.
Add the spinach celeriac and parsley. Season with salt and pepper cover and stew for another 10 minutes. Meanwhile beat the eggs milk and Parmesan cheese together for the omelettes. Season with salt pepper and herbs. Heat 1 tablespoon oil in a frying pan for each omelette and add a quarter of the egg mixture. Fry for 3 minutes until the bottom of the omelette is golden yellow place a quarter of the filling on top of the omelette and fold in half. Take out of the pan and keep hot until all the omelettes are cooked. Email this Recipe:
