Instructions: Cream butter and sugar. Add eggs. Beat well. Add carrots, spices, salt and flour and soda. Beat well. Add lemon rind and juice. Pour into a greased mold or coffee can. Steam in hot water for 2 hours. Serve with ice cream sauce or hard sauce.
NOTES : Dont be afraid to use a coffee can if you dont have a mold. It does a very nice job as a substitute. Email this Recipe:
