Instructions: Combine mashed potatoes, and 2 tablespoons butter, stirring until butter melts. Stir in eggs and next 6 ingredients; add milk, stirring until blended. Melt 1 tablespoon butter in a large nonstick skillet over medium heat; drop potato mixture into skillet, 2 1/2 tablespoonfuls at a time; flatten slightly. Cook 3 to 4 minutes on each side or until golden, adding remaining 2 tablespoons butter as needed. Drain on paper towels; serve immediately.
