Instructions: Bake pie shell in preheated 425 oven 10 mins. or until light golden; cool completely. In small skillet, saute onion in butter until tender; set aside. Separate 1 egg, then brush egg white on pie shell. Pour excess white into large bowl. Add yolk, remaining 2 eggs, milk, flour, salt, and pepper; beat until smooth. Stir in cheese and onion. Turn into pie shell.

Bake in preheated 325 oven 40 to 45 mins. or until knife inserted in center comes out clean. Cool at least 10 mins. Serve warm or at room temperature.
