Instructions: Cut the cake into 1 cm strips and put into the glasses.
Mix the rind and juice of the oranges and lemon (you should have about 200 ml liquid) with the caster sugar. Whip the cream until thick then gradually beat in the juice rind and sugar keeping the mixture thick Pour into the glasses and chill for several hours. preferably overnight Decorate with orange slices or segments and serve Note: the sponge can be sprinkled with orange liqueur if wished.
