Instructions: Spread the bread with butter and cut each slice into 4 triangles.
Arrange the slices to cover a greased 1 litre baking dish sprinkling the grated orange rind and raisins between them. Stir the sugar cinnamon and vanilla into the milk and beat in the egg yolks. Stiffly whisk the egg whites and fold them into the milk mixture. Pour over the bread. Bake in a preheated oven (190c/375f/gas5) for 40-45 minutes until the pudding is well risen and golden brown. Meanwhile blanch the orange slices in a little boiling water for about 5 minutes. Arrange the orange slices on top to decorate the pudding. Brush the jelly over the orange slices to glaze them.
