1/4 cup vegetable oil
1 cup granulated sugar
1 cup light brown sugar firmly packed
4 lrg eggs
2 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 cup shredded carrots
Grated zest of one fresh orange
1 tsp orange extract
----------------- Creamy Orange Frosting ----------------
12 oz cream cheese softened
3/4 cup butter or margarine softened
finely grated zest of 1 fresh orange
1 tsp orange extract
Instructions:
Instructions: To make the cake: Beat oil and sugars well, then add eggs, one at a time, beating well after each addition.

Whisk flour with baking powder, baking soda, slat and cinnamon, then blend gradually into sugar mixture. Stir in carrots, zest and extract.

Divide batter among 3 nine-inch greased and floured cake pans. Bake in center of preheated 325 i oven for 35 minutes or until wooden pick comes out clean.

Cool 10 minutes, then turn out of pans and cool on racks. Frost with Creamy Orange Frosting.

For the frosting: Beat cream cheese, butter or margarine and zest until smooth. Gradually add confectioners sugar, beating until smooth. Blend in extract.
