Instructions: Grate the zest from 2 of the oranges and set aside. Using a wooden spoon, push the cottage cheese through a sieve into a small bowl (this takes just seconds). Whip the cream until stiff peaks form. In a mixing bowl gently fold the sieved cheese and cream together and stir in the icing sugar and orange zest.
Pile the cream mixture into the centre of a large platter and, using a spatula, shape into a dome. Chill well. Meanwhile prepare the fruit. Using a sharp knife, peel and slice the oranges. Arrange the fruit attractively around the cream. Spoon the passion fruit pulp over the top of the cream and serve. Email this Recipe:
