1 tsp orange zest
1/4 cup orange juice
1 med onion minced
3 x cloves garlic minced
1/4 cup white wine vinegar
1/2 tbl dried coriander
1 tsp cracked pepper
1 tsp dried basil
Instructions:
Instructions: Combine all ingredients except the meat, mix well. Reserve 1/2 c. of the mixture, cover and chill it. Pour the remaining marinading mixture over the meat in a non-reactive pan. Cover and chill for 4-24 hours. Remove the meat from the marinade, reserving it for basting. Grill for about 8 minutes (forErare meat) over medium heat, basting often with the sauce. Meanwhile heat the reserved 1/2 c. of marinade. Remove the meat from the grill and let stand covered with a piece of foil for 5 minutes before slicing thinly. Serve garnished with additional orange zest sprinkled over top and pass the heated marinade/sauce at the table.
