Instructions: Combine first 5 ingredients in a large bowl; stir in chopped pecans and 2 teaspoons orange rind.
Combine eggs, orange juice, and mayonnaise; stir into dry mixture just until moistened. Fold in chopped cranberries; spoon into a greased and floured 9- by 5-inch loaf pan. Combine 2 tablespoons sugar and remaining 1/2 teaspoon orange rind; sprinkle over batter. Bake at 350 degrees for 55 minutes. Cover with aluminum foil, and bake 10 more minutes. Cool bread in pan on a wire rack 5 minutes; remove from pan, and cool completely on wire rack. This recipe yields 1 loaf. Yield: 1 loaf Email this Recipe:
