Instructions: Combine egg yolks and gelatin in pan. gradually add "Orange Crush". Cook over moderate heat, stirring constantly, until mixture reaches boiling point and gelatin dissolves. Refrigerate until thickened. Whip cream until stiff. Beat egg whites until foamy. Gradually add sugar. Beat whites until stiff. fold one-half cup of whipped cream into gelatin mixture. Fold egg whites into gelatin mixture. Spoon mixture into wafer-pecan pie crust. Refrigerate several hours or overnight. Garnish with drained mandarin oranges.
Wafer -Pecan Pie Crust 1 1/4 cups finely crushed vanilla wafers ( 40 to 45 wafers ) 1/4 cup finely chopped pecans 1/2 stick ( 1/4 cup ) butter or margarine, melted. Combine crumbs, pecans and butter. Mix well until blended. Press mixture onto bottom and sides of a 9 inch pie pan. Bake in preheated 375 degree oven eight to ten minutes or until brown. Refrigerate until chilled before filling.
