4 lrg eggs
180 gm caster sugar
the zest of 2 oranges
120 ml strained orange juice
the seeds from 4 green cardamom pods ground
150 ml single cream
1 x 24cm sweet pastry case baked blind
Instructions:
Instructions: Whisk the eggs and sugar until pale and creamy. Stir in the orange zest juice cardamom and cream then refrigerate overnight.

Strain the egg mixture through a fine meshed sieve and discard the solids.

Place the pastry case (in its tin) on a baking tray arrange the dates on top and pour in the egg mixture.

Bake for 30 minutes at 160C/325F/Gas Mark 3 until set.

Cool for 3 hours before removing from tin.

Serves 4
