Instructions: Some time ago (Im behind in my reading of ff digests!) a request was made for a gingerbread recipe. Heres one that I use, slightly modified (to remove the added oil) from a recipe from a February 1994 issue of Vegetarian Times.
Preheat over to 350 degrees F. In a large bowl, mix together wet ingredients. In a medium bowl, sift together dry ingredients. Add raisins. Add dry ingredients to wet ingredients and mix well. Pour into a non-stick 9-inch by 13-inch pan and bake 40 minutes, making sure not to overbake. Gingerbread will be moist. 24 servings. Vegan Email this Recipe:
