125 gm	butter
110 gm	sugar
2 x	eggs - lightly beaten

	Sift
250 gm	flour
1 tsp	baking powder
1/2 tsp	bicarbonate of soda
1/4 tsp	salt
	----------------- Part (C): ----------------
1 tbl	lemon juice
2 tbl	orange juice
4 tbl	UHT milk
	----------------- Part (D): ----------------
1 tsp	grated lemon rind
1 tsp	grated orange rind
	----------------- For filling: ----------------

CREAM (A) until pale. Gradually beat in the eggs. Fold in dry ingredients (B). Mix in (C) and add (D). Do not over-mix the mixture.

Spoon 2 tbsp mixture into greased muffin pans to slightly half full. Add 1 tsp lemon pie filling then top up with more mixture to three-quarters full.

Bake in a hot oven at 200 degrees Celsius for 20 to 25 minutes or until cooked through.
