CREAM (A) until pale. Gradually beat in the eggs. Fold in dry ingredients (B). Mix in (C) and add (D). Do not over-mix the mixture. Spoon 2 tbsp mixture into greased muffin pans to slightly half full. Add 1 tsp lemon pie filling then top up with more mixture to three-quarters full.
