Instructions: Mix the four, baking powder and sugar and salt together. Whip the oil, egg and milk in a blender then mix with the dry ingredients and stir in the pecans.
Lightly grease a muffin tin or use muffin liners and fill 1/3 full with batter. Spoon a half teaspoon of marmalade on top of the batter. Fill to 2/3 full of batter over the marmalade and bake in a preheated 400 degree oven for 25 minutes or until a toothpick inserted in the center comes out clean. makes 12 muffins Email this Recipe:
