4 x boneless skinless chicken breast halves, 3-4 oz. each
1/2 cup orange marmalade
1 x green jalapeno, finely chopped
1 x red jalapeno, finely chopped
2 tbl fresh lime juice
1 cup fresh orange juice
1/2 tsp freshly ground black pepper
1/2 tsp ground cumin
1 tbl chopped fresh parsley, or 1 teaspoon
crushed dried parsley
1/4 cup tequila
Instructions:
Instructions: Preheat oven to 350 degrees. Wash and dry the chicken breasts and place in a roasting pan. Mix together the orange marmalade, jalapenos, lime and orange juices, pepper, cumin, and parsley and spread over the chicken breasts. Pour the tequila and Triple Sec around (not over) the chicken and bake in a 350-degree oven for 20 to 30 minutes, or until the chicken is done, basting occasionally with the pan juices. Remove the chicken from the pan and serve.

SERVING SUGGESTIONS: Serve with ratatouille or Wild Rice and Asparagus Salad with Chipotle Dressing (see recipe).
