Instructions: Advance prep: Peel and cube the potatoes and cook until fork tender. Mash. Set aside.
Cook the onions in the butter over a low flame until soft but no colored. Add the potatoes and mix. With a whisk, carefully beat the creme fraiche and orange juice into the potatoes, until they are light and fluffy. Mix in half the orange peel, and scatter the rest over the potatoes before serving.
