Recipe for Orange Olive and Rocket Salad

3 lrg	oranges peeled and thinly sliced
115 gm	black olives halved and stoned
	large handful rocket leaves or watercress
3 tbl	finely chopped parsley or chervil
	----------------- For the vinaigrette: ----------------
2 tbl	hazelnut or walnut oil
	juice 1 small orange
1 tbl	honey

Instructions:

Instructions: Cut the orange slices into 4 and place in a bowl together with the remaining ingredients.

Whisk the vinaigrette ingredients together with salt to taste.

Pour this into the salad and toss to coat everything in it.

Serve lightly chilled.

This is an unorthodox treatment of the exotic salads from Morocco with a sweet and sour taste.
