4 lb yams or 2 2-lb. 8 oz cans
2/3 cup orange juice
1 tbl orange rind grated
5 tbl brandy or rum
2 tsp salt
1 tsp ground ginger
4 tbl melted butter
1/3 cup packed light brown sugar or golden
3 x egg yolks
ground pepper to taste (fresh)
----------------- TOPPING ----------------
2/3 cup packed light brown sugar or golden
1 stk melted butter
1 cup pecans chopped
Instructions:
Instructions: The night before serving this dish make the yam part.

YAMS: If using fresh yams, cook and peel them. If using canned yams, drain them. Beat yams until smooth. Add the rest of the ingredients and beat until smooth. Place in a greased casserole dish and smooth top.

TOPPING: Mix and spread evenly over top of casserole. Bake at 350 degrees F for 40-45 minutes until golden brown and bubbly.

A single recipe makes 8 - 12 servings, depending on the amount of other food being served. Use a 12" shallow quiche dish.

This recipe may be doubled or tripled, but do not make in a deeper dish or the ratio between yams and topping will be off.
