Instructions: Advance prep: Peel and cube the potatoes. Cook until fork tender. Drain. Add the fat-free cream cheese and stir well. Add a pinch of salt and pepper. Cover and set aside, allowing the cheese to melt.
Advance Prep: reduce the orange juice in a nonstick pan over medium-low heat to 2 tablespoons. Set aside to cool. Soften the onions in the oil over low heat. Add the potatoes and orange reduction. Mix well to incorporate the cheese. With a whisk or spatula, add the buttermilk and beat until the potatoes are light and fluffy. Stir in the parsley and serve. Description: "Orange flavored mashed potatoes with refreshing bites of parsley."
