Instructions: Beat egg whites to a stiff foam; gradually add sugar and continue beating until mixture forms stiff peaks that bend slightly. Add orange marmalade and orange extract; pour into greased top of double boiler. Place over hot water; cover and steam 1 hour. Turn onto warm serving plate. Pour over Foamy Sauce
(recipe follows). Sprinkle with nuts. Serves 4 to 6. Foamy Sauce: Beat 3 egg yolks, 3/4 cup confectioners sugar, 1/2 teaspoon vanilla and 1/8 teaspoon salt; fold in 1 cup heavy cream, whipped. Chill thoroughly. (If you are concerned about uncooked eggs, use egg yolk substitute.) Email this Recipe:
