Ingredients:
Amount Ingredient
1 tbl Margarine
1 lrg Onion minced
2 x Celery stalks minced
2 cup Uncooked brown rice
3 cup Water
2 cup Homemade chicken broth
(or commercial low-sodium variety)
2/3 cup Golden raisins
Peel of 1 orange chopped
1/8 tsp Ground cloves
2 x Peeled oranges cut small segments
Instructions:
Instructions: In a large saucepan over medium-high heat, melt margarine. Add onion and celery and saute 3 minutes. Add rice and saute 2 additional minutes. Add water, broth, raisins and orange peel. Bring to a boil, then reduce heat. Cover and simmer 30 to 40 minutes.

Stir in cloves and orange segments and garnish with mint. Serve immediately.

This recipe serves 8.
