Instructions: Bring a saucepan of salted water to boil. Add edamame and cook 3 to 5 minutes. Drain and rinse under cold water.
Grate peel (orange part only) from one orange and set aside. Peel all of the oranges and cut segments from membrane, cutting into bite-size pieces. In a bowl, combine orange pieces and edamame with parsley and onions. Mix orange peel with oil and vinegar. Pour over edamame mixture. Chill before serving. Email this Recipe:
