Instructions: Set the oven to its lowest temperature.
Peel the zest from the fruit with a vegetable peeler. Be careful not to get the white pith, its bitter. Spread the zest out on a tray covered with aluminum foil. Put in the oven and leave for 3 hours till dried out, then let cool. Divide the sugar between 2 sterilized jars, layering it with the dried zest. Leave in a cool dark place at least 1 week.
